Son in UK on Verizon’s US plan

If we buy an iPhone in the ail from Apple will my son be able to keep his US number and UK number and stay on a US Verizon plan?

Those sound like questions for Verizon and his UK carrier. If you buy an iPhone 14 series in the U.S., it will only use eSIMs. It will have no physical SIM slots. Verizon supports eSIMs so that should not be a problem. You'll need to consult with the UK carrier to see if they do as well.
