I bought a new apple watch and want to give my old apple watch to a friend. How do I do this?

My old iWatch series 3 will not pair with their iPhone. They want my apple id, and I don't want to give my apple id to a friend. How can I get it unregistered with me and registered with them? I now have an iWatch 7. I have no problem setting that one up.
