The creation of a hyperlink, in the manner that you describe (and are accustomed on other operating systems), isn't directly supported in iOS/iPadOS. You can create a direct link to a resource address,, but cannot directly create hyperlinked text in Mail.

Thank you ChrisJ4203, I understand your suggestions, but I expect to have my html copied into the clipboard, highlight my trigger text and find a button that says "Make Link" along with the "Cut" and "Paste" and "Look Up" Etc. choices. Nor can I find any finger swipe combination that will reveal a contextual menu.
I'll keep searching, thanks again.
If you copy the link and paste it in the email, or at least type the entire web address, including the http, it should automatically turn into a link once the email is sent.
