The list of browsers in the Gmail app is ones chosen by Google. Mine shows Safari, Google, and Chrome. It does not show other installed browsers: Firefox, Edge, Opera, or DuckDuckGo. As the gmail app was written by Google they are the ones you should ask.
I'm not using that browser on my iPhone, but perhaps there might be some options (among the MS Edge app's settings) that can be adjusted.
Shouldn't be this case, Microsoft support team could have the appropriate answer to your question.

thanks but this phenomenon persists even after Chrome browser is deleted.
Why is Chrome browser still showing ? difference this time is iphone ask for install of Chrome browser.
Edge browser is still not shown as option even when there’s only Edge & Safari browsers available.
If you already downloaded/installed the MS Edge app on your device successfully, I suggest that you contact Microsoft support team and ask them.

thanks but i still can’t keep wondering why my years old 2019 Android phone version 8 show Edge in addition to Chrome browser?
