Signing out of Apple ID on the iPad 17.5.1
I have the iPad 17.5.1, i would like to sign out of the apple id that is there right now so i can re-sign back in with my info.

Outside of Educational or Enterprise Environments, an iPad is essentially a single user device. Before being used by someone else, the iPad should be properly prepared before being passed to somebody else:

Otherwise, be aware that simply signing-out from the current AppleID will not, of itself, remove the associated Activation Lock. If the Activation Lock needs to be removed, you must disable it before signing-out:
Settings > [Name / AppleID] > Find My > Find My iPad > Find My iPad - set to OFF
Assuming that the iPad belongs to you - and you have knowledge of the currently used AppleID credentials - you can simply sign-out from iPad settings:
Settings > [Name / AppleID] > Sign Out
