signing off apple id

look here Sign out of iCloud on your iPhone, iPad, iPod touch, Apple TV, or Mac - Apple Support

To sign out : go to settings>click your name, and click sign out at the bottom of the page

When the sign out button is greyed out please go to screen time>content and privacy restrictions> scroll down a bit and see if account changes are allowed. If they're not, turn that on to see if you can sign out after that
