I keep getting a sign that says my Iphone is outdated. It a new 11 with all updates. How can I get the watch and phone to pair?

Sorry, I have an Iphone 12 pro, not an 11 IOS 14.8.1

Settings, then tap General, then tap About and you'll see Version listed.
