I keep getting a sign that says my Iphone is outdated. It a new 11 with all updates. How can I get the watch and phone to pair?

What is the current iOS version you are running on your iPhone?

Exactly as I wrote above:
Settings, then tap General, then tap About and you'll see Version listed.

You are going to HAVE to update your iPhone to the current iOS version which is iOS 15.1.
