Up until a couple of days ago, when I was filling a form in my iPad Safari browser, I could single tap in the form and my auto fill information would show on the bottom of my display. Now nothing happens until I tap the form a second time. Why is this frustrating behavior happening?

Never been the case for 15-18 years on two different iPads. It just started this past week. First tap on the form field brings up the autofill options at the bottom of the screen. Now I have to tap on the form field a second time to bring up the options at the bottom of the display.
Generally, the behaviour that you observe might be expected. The first tap selects the input field; the second tap completes the autofill action.
Presumably you have updated to iPadOS 26? If so, to accommodate significant updates to multitasking, you can expect to encounter some minor functional changes to the UI (User Interface).
