I want to minimise Safari on my Mac. Sometimes I clumsily hit the red close button. Is there a way to avoid this?

No, but if you should inadvertently do that you can Reopen All Windows from Last Session. History menu.
Or, de-select Close windows when quitting an app. System Settings.
Or, use Safari in Full Screen Mode, which precludes the ability to use the "minimize" button.
