I want to see the data for even challenges that are unattainable or failed is this possible? For example November’s challenge is not on my Apple Watch anymore and I want to see what it was.

The data used by challenges is just the normal workout data and is in Health app, Activity.
If you passed, eg do 3 runs a week for 4 weeks, you get a shield, if you didn't do enough, you didn't get a shield.
No additional data is stored, just the shield
I don't know of a way to look back at last month's failed challenge.
