My family plan is ran by my brother which we’ve had for years but is no longer feasible. I have a number of subscriptions under my Apple ID but they’re paid for by my brother’s card. Will I lose access if I leave the family plan or since they’re on my Apple id will I be able to keep them?

You have to have downloaded the app with your own account, that is not in question. The important bit is who actually started the subscription.
If you went in and started the subscription yourself after downloading the app, then the subscription belongs to you and is part of your Apple account.
If you go Settings ➜ Account ➜ Subscriptions and you see the subscription, then it belongs to you and will continue to exist after you leave Family Sharing.
If the subscription only appears in Settings ➜ Family ➜ Subscriptions as shared to you by him, then he owns that subscription and it will not continue for you when you leave Family haring, so you would need to start your own subscription then.
