Unpairing Apple Watch from Health app to stop data sharing
How do I unpaid my Apple watch from health app so that it quits sharing data?

Open the Settings on your iPhone, go to Privacy & Security - > Motion & Fitness, disable Fitness Tracking
Same for Privacy & Security -> Health -> disable sharing data with all listed apps
