Use existing Hide My Email in composing original email (for cause)

Very annoying to read again and again that Apple will offer a brand new Hide My Email with every single interaction, but what I want to do is dialog with sites (merchants) that I'm already using a Hide My Email. Change passwords, etc, any kind of dialog. If Apple forces me to use a never-seen-before Hide My Email, that kind of kills a lot of the joy. Thanks!

AI says "To use an existing Hide My Email address in a new email, open the compose window, enter the recipient's actual email address in the "To:" field, and then click the "From:" field to select "Hide My Email" from the pop-up menu. This will automatically use the pre-existing random address associated with that specific recipient, keeping your personal email private."


Took the trouble to repeat the process, and this does not happen. Hide My Email is in the pulldown, but only to make a new & different Hide My Email address which is not helpful. Among other things, a new unique Hide My Mail for every distinct interaction will quickly get unweildy, with thousands of addresses.


I'm frankly surprised, this should be self evident and more surprised I'm not able to find the answer with due diligence search! I'm not an idiot and this is not a bizarre thing I'd like to be able to do!
