How do I remove "smiley" emoji from both sent and received emails

How do I remove "smiley" emoji from both sent and received emails.

For some reason only known to the powers that be, unwanted smileys are appearing in my email addresses.

I have no idea if they are only on my Mac and iPhone, or embarrassingly appearing in every email I write.

How do I stop this happening.
