I have just bought a LaCie 2big DOCK for my MacBook Pro - does not show up in Disk Utility - should I use exFAT or APFS ?

The 2 Big Dock is a raided external drive. It manages its own internal format since it's raided. You should not be messing with it beyond that as you can break the raid.
Also, if you don't see it in Disk Utility how exactly are you going to format it?

Thanks very much for that information - the drive has now become visible in disk Utility. I am not going to do anything at the moment other than to do as you say. Thanks for taking the time to give me your advice - much appreciated.
