i'm trying to sign in to apple cash and can't see the symbol of the apple cash in the wallet in settings

Apple Cash isn’t something you sign into. Apple Cash is a payment method (prepaid debit card) that appears in your Wallet app once you open an account. Please review the Apple Support article I linked to below.
