I have a Polish keyboard, on a Macbook Pro. By holding option, I can type letters like ą, ć, ę, etc. However, I can't type ó (Option + o). I can only type Ó, by doing Option + Shift + O. In the Keyboard Viewer, when I press Option + o, it shows that I'm typing it, but it doesn't show it when I type.

Do you actually have a MacBook Pro with special printing for Polish on the keys, or do you just have "Polish" as the input source being used?
In any case, option o should give you ó. Does this fail in all apps -- Safari, Mail, Messages, etc?

You have to press long on a key to get those extra character options.
For example, if you want to type ó, you should long-press on the o key to get extra key options.
