How can I maintain 24 bit audio when converting FLAC files to AAC

Try using https://www.mediahuman.com/audio-converter/ to convert to Apple Lossless (ALAC) rather than AAC. I haven't personally tested it, but it might be able to preserve the 24-bit sample depth and the original sample rate.
