Compatible with Catalina and Sequoia but not Monterey?

I am running Mac OS Catalina, and in my upgrade list Sequoia but not Monterey. Why would my iMac be compatioble with Catalina and Sequoia but not Monterey?

Id like to update to Monterey.

iMac 27″, macOS 10.15

If you want to update to an older version of macOS, you need to go through the links in this Support article. As you have discovered, Apple likes to hide old versions of macOS, by default.

If you do not want to update to Sequoia, I would recommend that you update to Ventura or to Sonoma. Monterey is no longer one of the "most recent three". This means that vendors such as Adobe and Microsoft will very soon drop support for it – if they haven't already.
