One way is to use Conditional Highlighting.

  1. Select the range of cells where you want to hide 0s
  2. Tap Format "paintbrush"
  3. Tap the Cell tab
  4. Tap Add Conditional Formatting (at bottom of that tab)
  5. Make sure Number tab is selected
  6. Tap Equal to...
  7. Enter 0 in the number field
  8. Scroll down and tap Custom Style
  9. Set Text Color to white (or what is the background color of your table)
  10. Make sure Cell Fill is set to No Fill
  11. Tap Done

Now all 0s in that range won't be visible.

On the Mac you could also add a Custom Format, but I couldn't find a way to do that in Numbers for iOS/iPadOS

Interesting omission on the part of iOS.

However, if you open the spreadsheet on a Mac, you can set a Custom Format that suppresses 0-values, and this is honored and reflected when you re-open the spreadsheet on iOS.

So clearly Numbers on iOS understands and supports custom formats, but there's no interface to define or edit them.

Feedback - Numbers - Apple seems to be the next port of call :)
