I’m considering buying a movie (Star Wars: Revenge of the Sith) on my iPhone using the Apple TV app. It says that iTunes Extras are included, but where can I see what iTunes Extras are included with the movie purchase? I can’t seem to be able to find any information about it on the page.

The difference is on your iPhone it detects the Disney+ App and wants to play it there by default so no iTunes Extras is shown.
On a Mac since you don't have the linked App it defaults to the iTunes Store version and shows the iTunes Extras section.

You are correct, it should show the iTunes Extras regardless.
Find the movie in the store, and scroll down to the "iTunes Extras" section for a brief description of the extras.
Normally these include things like behind the scenes looks, commentary, special audio tracks etc...
The information about iTunes Extras seems to be available for all movies on the Apple TV app on Mac. On iPhone, information about iTunes Extras are apparently only displayed for some movies (for some reason)? Come on Apple, just show the information about iTunes Extras on all movies on all platforms!
This isn’t visible for me anywhere on the page for Revenge of the Sith. Can you find any section on the Revenge of the Sith page that includes information about its iTunes Extras?
I will have to say though, even in the Mac Apple TV app the description is not that great and detailed...
