I have deleted and re-added my new credit card with the updated expiration date and CVV number in Apple wallet but the old CVV continues to populate each time I go to pay for something. Any suggestions about how to get the new code to populate?

Your bank needs to remove their Apple Pay token(s) for your card and reprovision the card for adding to Apple Wallet and Apple Pay.
