I find that on many different graphs where I am using a column of dates as the x-axis the range does not expand as I add new rows to the table, this leaves the graph without the full range of data.
Typically the first column with the dates is a Header Column.
Is this a known problem or is there a proper way to make this work?
I am using Numbers on my Mac and iPad.

Just tried it and got
Make sure the range for Value: is the entire column:
Rather than a range within the column:
To switch, click the oval address 'token' and select the entire column by clicking the column letter.
Keep in mind that if you decide to use a X-Y Scatter chart with dates (say, if the dates are not at even intervals) then you need to make sure the column on the left with the dates is not a Header Column.
You can control that by clicking the table and going in the menu to Table > Header Columns and choose 0.

I assume this is just a presentation change not a functional one?
I just added some test rows to my table and the graph seems to have kept up, I will have to see it if stays working over the next few days.

Using your example I would have clicked on the column headers, the A & B, to create the initial line chart.
I add a new row each day but find the graph does not keep up, it does not expand to incorporate the additional rows.

My graph has several ranges but I've checked Value and for one its says
Mileage::Q2:Q22 | Q23:Q53 | Q54:Q84 | Q85:Q114 | Q115:Q145 | Q146:Q175 | Q176:Q206 | Q207:Q237 | Q238:Q266 | Q267:Q297 | Q298:Q327 | Q328:Q358 | Q359:Q388 | Q389:Q419 | Q420:Q429
If I turn off Organise, the table is organised by month on the date column, it changes to
Mileage::Q2:Q429
If it Edit Ref, I've noticed an option to Select all Body Cells. Value then changes to 'Rolling Yearly 30 Day Forecast' which is the column title.
Does any of this point towards the problem?

Good luck. The (Body) suggest you aren't basing your graph on a straightforward data table. Categories on, perhaps? Or perhaps a Pivot Table? In my experience a straight old plain table works best.

Have you checked, as I show in my screenshot, to see what you have for the range after Value: ?

Have you tried clicking the oval token with the Q2:Q429 and then clicking the column letter Q so you get Mileage: Q?

You could try turning off Categories and uncheck 'Use header names as labels' in Numbers > Settings.
