I went to Apple Music/sync/Apple TV on windows 10 but I cannot stand them.
what was simple in iTunes is not simple anymore.
is it possible to go back to iTunes?

At the top of iTunes, select view > Media Kind > Music and see if it shows up. That is an apparent extra step some people are needing to do to get it back to normal.
My PC went from "normal Itunes" to podcas… - Apple Community
Uninstall Apple Music, Apple TV, and Apple Devices. Restart your computer. iTunes should go back to its pre-Apple Music state with those moves.
This won’t affect my library, will it?
I uninstalled the 3 apps and rebooted. No change to itunes
