I can't find anywhere that you can rip a CD into Apple Music on WIndows. I see instructions for the Mac but nothing on windows? I know that are trying to force us to a monthly subscription, but this seems deliberate.

Apple Music for windows is more restrictive that the Mac version. There is no facility to import CDS.
You can revert to iTunes which still works on windows. You will need to uninstall the 3 apple apps that were recently introduced.
