So, even if the device was reset and the battery was replaced with a non-original one, the device should identify that the hardware identity doesn't match, and therefore show the "Unknown Part" alert, right? (I am trying to understand if a previously used iPad had any unofficial replacements).

Thank you! What does it mean that no service history information is available? Is there a way that something was replaced with a non-genuine part and doesn't appear there? (For example, if the device has been reset, does the information about the replaced parts dissaprear?)
As understood from available information, when Apple or an Apple Authorised Service Provider (AASP) performs service or repair, service records for the device are updated. This information, while associated with the unique device identifiers, is not stored on the device itself - but is retrieved from Apple's servers. As such, resetting the device does not erase service history data.
As for detection of non-Apple parts - internal components are serialised and associated with the unique hardware identifiers of the device. When parts are replaced by Apple or an AASP, special software is used to "associate" the replacement parts with the device. Unless both genuine parts are used - and hardware identifiers are updated - these parts will trigger reporting of non-genuine parts.
Be aware that Apple does not supply components outside of its own network of AASPs. As such, independent repairers do not have access to genuine parts. Even if using genuine parts scavenged from other [broken] devices, the hardware identifies won't match.
Insofar as available information supports understanding, a reset of the device will not hide the presence of non-genuine/unauthorised parts from the OS - or the reports generated by the device.
If purchasing a previously used device, you would be well advised to only purchase a renewed/refurbished device directly from Apple or an Apple Authorised Retailer. In so doing, you have assurance that the device has a warranty - and that any replaced parts are genuine.
Purchasing from a non-Apple source provides no such assurance. Be aware that any devices that incorporate non-Apple components will not receive any technical or hardware support from Apple - access to all such services being forfeit when unauthorised repairs have been made to the device.
Purchasing/acquiring a pre-owned device is fraught with risk - perhaps offset by a substantial saving in cost. Buyer beware.
Absence of parts and service history data indicates that (a) no non-genuine parts have been detected by the system hardware - and/or (b) no service history information is available for that device
