How can simply selecting 20 charts (to recolour them) produce a "lock" "unlock" menu which keeps appearing (as it has does throughout this whole project). The only fix I have found to be able to regain the format menu is to "Apple Undo" everything?

All but one of your charts is locked. You can see by the x's in them them when you select them. With them all selected, click the Unlock button.

With multiple charts selected you can click on Charts on the left of Arrange, the only thing you can do is change the color scheme and the background color. For individual charts, click on some blank space to deselect them all and then select one at a time.
