Why would you make a backup of the phone using iOS 17 if you are going to remove iOS 17 from the phone? The backup will be useless when the phone is restored to iOS 16......which is what the OP wants to do.

If the user later decides to install a newer version of the Beta and uses the backup....as you recommend....the issues on the initial version of the Beta backup will transfer right back to the phone again.
