Welcome to Apple Support Communities.
With iOS 16, you are able to record your workout in the fitness app. This will close the move ring using the sensors in your phone to detect movement. Further clarification may be necessary:
I want to MANUALLY enter, say one hour of ice hockey. I don't play hockey with my iPhone on me, and I don't wear a fitness tracker while playing, so I want to manually enter the activity in the Health app.
Is that possible?

Now to find some method to estimate how many calories I burn, or "steps" I take, when I play. (Fitness trackers, to my recollection, don't seem to capture skating strides like they do steps, since there's less impact between the foot and the ice for the accelerometer to pick up on.)
