It is common practice in most computer systems to “mask” passwords during entry - as this reduces the opportunity of discovering credentials through “shoulder surfing”.
Some systems will allow individual elements to be briefly visible to confirm entry, but not show an entered password in full; this is not paranoia, but follows good infosec principles.

As already indicated, Apple do have appropriate channel through which you can express your preference.
