undoing ios update 15
how do I undo ios 15 update? I don't like how the icons show up and all the extra widgets. Have tried going into general settings and deleting update but nothing changes.

You can't.
Apple has no provisions, nor instructions/procedures for downgrading/reverting back to a previous iOS/iPadOS versions.

With that stated, you maybe able to find procedures, online through an Internet search, to accomphish what you seek.
However, these procedures require that you created a previous backup of all of your data on your iPad, prior to upgrading/updating, to iPadOS 15, as these online procedures require a complete erase and reset of your iPad to a factory-like condition, first, then a re-install of data from a previous made backup at the end of these re-install procedures.
