System occupies HUGE space on disk
I have a MacBook Pro 15 inches 2018 with Mojave OS and a2Tb disk. The disk is permanently almost full, but my documents occupy 650 Gb, whereas the System occupies 1.12Tb !

This is a link to another discussion where they were having the same problem. It is a few years old, but some of the steps should still work. I hope something on here works for you.
Thanks for the tip. I read the thread and ran some of the tricks there, which savec so me Gb of space, but it is far from explaining the 1.1Tb used by my System.

If none of those worked I'd try cleaning Caches...
