After updating Apple Software, my SMTP Server List is blank. I have no way to send nor receive emails via Safari.

Welcome to the Apple Community where some of us do our best to help each other :)
Sorry you are having trouble accessing your e-mail.
If you are using web-based e-mail, have you tried just clicking a bookmarked link, or entering the Internet address into Safari ?
If you use Google / Yahoo or other e-mail providers:
Seems you may need to set-up your e-mail connections again ?
Here's one way you might want to do that, for use with the Mail app..
You can click on the small black apple icon in the top menu bar.
Then choose "System Preferences" from the drop-down list that opens.
In the window that now opens, choose the "Internet Accounts" icon (see below)
Now you should be able to click on your e-mail provider, and tick "Mail" to have that set up for you.
To see your e-mails, you just click on the "Mail" app icon in the dock, to open up the "Mail" App.
Hope something here helps you enjoy your e-mails again.
