Best way to lock down an iPod Touch?

I want my kids to be able to use it to play music -- local files, plus Spotify, Apple Music, podcasts, etc. -- but nothing else. Basically like an old-school iPod, but with streaming music. (Ideally, I'd block it from playing videos from the streaming music services, and go strictly audio.)

Is there a good way to do that? I was about to just buy an Android phone and put it in kiosk mode, but thought this might be nicer.

Thanks!

If its a sufficiently recent iPod with iOS 13 or 14 installed, you can turn on Screen Time, set it to Down Time always, and just enable the Apps you wish to be available for them.

Blocking videos may not be possible though.
