In email. How do I change the archive icon to the trash icon?

You cannot change the icon - but you can change your email account settings such that deleted email is moved to Trash/Bin instead of the Archive folder.
Assuming that you have iOS/iPadOS14 installed:
Settings > Mail > Accounts > [Your email account] > [Account] > Advanced > [Move Discarded Messages Into] Deleted Mailbox
