Download only (not install) macOS Big Sur from older / unsupported MacBook

How can I download only (not install) macOS Big Sur, from a MacBook unsupported by the latest version? The App Store returns the following error: "The requested version of macOS is not available".


I am trying to create a bootable installer for a newer MacBook M1, from a MacBook Pro (mid 2012) running macOS Catalina, as described in the article bellow:
