Apple TV app user guide for smart TVs and third party streaming devices - Apple Support

specifically:

Use subtitles and captioning in the Apple TV app (settings for default behavior) - Apple Support

and Turn subtitles and closed captioning on or off (if available) during playback - Apple Support
