Welcome to the Apple Support Communities! Thanks for posting about the color of your iPhone display after resetting everything. We'd be glad to assist you.
Based on the screenshot, this looks like it might be a Color Filter. Let's check by having you go to Settings > Accessibility > Display & Text Size > Color Filters. Check to see if one called Grayscale is turned on. If so, tap on the Color Filters switch to turn that off. More info on that process can be found in Use display and text size preferences on your iPhone, iPad, and iPod touch. Let us know what you find out.
