How to change Apple ID's country without erasing everything in Apple Music library?
Or if there's a way to add all of the songs back easily that would be good too.

Not possible. Changing countries means a new subscription.
Or if there's a way to add all of the songs back easily that would be good too
Assuming the same music is available in the new country, you'll have to add it back manually.
