How do I get rid of Icloud and retrieve my data?

ICloud has made a mess of my macs. How do I get rid of it and get my data back? If I just unclick Icloud in preferences there is nothing left on my mac Mini

Archive or make copies of your iCloud data

Then turn off iCloud syncing.

Deleting icloud on mac without affecting another I need to wipe a Mac Mini to new status, but I have iCloud desktop. If I delete anything there, it deletes form my MacBook Pro as well. HOW DO I Clean one without affecting the other? Thanks in advance for your help...
