Mine connect to my Apple Watch Series 4 very nicely.

Apple Watch -> Settings -> Bluetooth

On the back of the AirPods case is a "Discovery Mode" button. Press the button, with the AirPods still in the case.

The AirPods should appear as a device you can pair with on your Apple Watch -> Settings -> Bluetooth screen.
