I want to use Apple Wallet for airline boarding passes as I previously have but it seems now I can’t unless I add my credit card on it. I do not want my credit card attached to Wallet. Can this be done and does it also have a monthly fee for it.

This is incorrect. You don’t need to add a card to add boarding passes. They are entirely separate processes.

Yes, you can add boarding passes from airline and booking apps by pressing the “add to Apple Wallet” button in said apps, or emails from them. Adding passes and tickets has always been, and continues to be free.
