My phone is not working properly sometime. It’s go off by himself and it’s very slow and I have contacts that I don’t have before so many things that I never did.

Unless you have jailbroken your phone, the likelihood that this is some sort of outside interference is essentially nil.
Are you sharing an Apple ID with someone? If you are, stop that. It will lead to all sorts of weirdness.
Go to Settings>Battery>Battery Health> Maximum Capacity. If it's less than 80%, you need a new battery. An aging battery can result in unexpected shutdowns.
You should also contact Apple and have them run diagnostics.

Phones acting slow, restarting on their own, and random new contacts showing up can feel sketchy, but most of the time it’s bugs, sync issues, or an account problem rather than someone hacking you. Stuff like iCloud importing old contacts can make it look like people suddenly appeared in your list.
I’d check for any apps you don’t remember installing and make sure your accounts are secure. Or run a malware scan with something like certo antispy or mvt.
if a person could hack your phone then their motive to do so would be to try to steal your identity / creditcard info and the likes, they would attempt to do so in a way where you would be none the wiser, because if you were then you would cancel the creditcard and the likes.
so it would not be logical for them to make your phone act strange and make a notice of their doings
if it was me then I would suspect a software issue and try steps like
