Selected font won't remain as default.

Font choice selected through "Fonts and colors" in Settings won't remain selected as default even though shown as default message font in Settings.

I selected Avenir Next 14 pt Demi-Bold but all new messages default to Avenir Next 14 pt Regular.

If by chance your purpose is to have your chosen font seen by recipients, this can’t be achieved via mail’s font settings, but has to be done in the new message pane for each outgoing individually.
