Unable to Change Email Display Name on Mac

I recently added a new Mac and it looks like my iCloud email display name has reset itself to my legal name after importing with Migration Assistant. I literally never use my legal name day to day.

It used to be possible to change the name in mail settings, but I cant find the option anymore. How the heck do I change the name associated with my email??? Mac in question is on the latest update of Sequoia 15.7.1

It doesnt look like a customize much of anything anymore. I really hate how gradually more dumbed down the Mac OS UI has been getting over the years.

How about in the Mac Settings => Internet Accounts explore what you can change under the Mail accounts shown there ...?

Note that changing the full name ("alias") shown for iCloud email is slightly different as described in the above link.

In Apple Mail, if I go to Apple Mail Settings, in the Accounts tab I see "Email Address" and entered there is shown

John Smith <john.smith@xxxx.xxx>

for a made up name of John Smith m(for purposes of illustration).

I also show the same name under my Contacts entry for me, and also for my Apple ID and iCloud in Settings for the Mac.

And that name is what shows as my email display name.
