Does un-pairing and re-pairing an apple watch to the same iPhone result in loss of settings

If an Apple Watch is backed-up, will un-pairing, re-pairing and restoring watch from back-up result in loss of any Apple Watch settings when these steps are taken using the same watch and the same iPhone?

Apple Technical Support suggested these actions to resolve the problem shown by the attached image. The username "Test2" was apparently sourced (created to troubleshoot a problem comparing user (me) and a newly created "test user" on a Mac mini that has been erased and returned to Apple.

The Sleep App is incorrectly displaying my user name. Test2 in not my user name. "Test2" is not found anywhere on the iPhone settings or the Watch settings.
