Apps not displaying after macOS Tahoe 26.0.1 update on MacBook Air

my MacBook Air updated to tahoe 26.0.1 and my apps will no longer display.

It's still not entirely clear what you mean. Are you referring to Launchpad? Tahoe got rid of it, so you still have a Launchpad alias in the Dock, with an icon that looks like this:



that would now be a broken alias. You might as well drag it out of the Dock, to delete it, since the application that it used to run is gone.

I believe I know what they mean, because I was looking for an answer to the same issue. Previous versions of macOS would have a trackpad gesture (three fingers and thumb pinching) to display the launch pad. In macOS Tahoe 26.0.1, if you did that gesture, the apps app would open instead of launchpad, since the former was to replace the latter, but the effect was the same (i.e. it displayed your apps when you made the gesture). On subsequent updates, this feature is missing.
