iPhone Messaging - Marking a known contact as unknown

So for me I get those text updates from different stores or what have you. One of those numbers comes through my messages as a known contact. My issue is that I want to mark them as unknown so the filtering part of Messages keeps those updates within another page. I can’t see to find a way to mark a known number as not known (or unknown)
