Why is it so difficult to edit my text with AI trying to correct me all the time. Can I turn AI off?

So I used speech to text sentence and then go back and try to correct what I would’ve typed a third of the time to type, but it’s almost impossible to correct. Anything in text via text message email bar open dialogue window.

Am I just stupid for being an Apple user for 30 years?
